The North Shore Cattle Company (NSCC) was established in 1997 by former state veterinarian Dr. Cal Lum and his wife, Kay. The family-run operation includes son, Ryan; daughter Tammy; and even grandchildren.
The ranch maintains between 400 and 250 head of cattle on 1,400 acres on the North Shore of Oahu.
The demand for NSCC beef is stronger than ever. With Hawaii's top chefs and restaurants requesting the premium beef, it is often difficult to find it at just any supermarket. NSCC beef can be found at the KCC Farmer's Market on Saturday mornings and the Kailua Farmer Market on Thursday evenings. NSCC beef will also be returning to Tamura's Markets in Wahiawa and Hauula.

Kay’s Cowboy Bourbon Stew (for 4 normal guests or 2 hungry cowboys)
1 lb. North Shore Cattle Company Chuck Stew Meat
1 lb. North Shore Cattle Company Brisket or Foreshanks
3 or more garlic cloves, chopped
Olive Oil
Butter
2 cans beef broth
¼ cup bourbon (Wild Turkey or Makers Mark)
1 onion, chunks
3 carrots, chunks
3 celery sticks, sliced
2 large potatoes, chunks with skin on
1 - 8oz. can tomato sauce
Parsley, oregano and basil, chopped fine to taste
Salt and pepper to taste.
Season beef chunks with salt and pepper, then dredge in flour. Add garlic cloves to olive oil and butter and bring to medium heat in large stew pot. Sweat garlic but do not let it brown. Add beef chunks and brown. Add beef broth and bourbon. Add onion, parsley, oregano and basil. Cook stew on low boil for about 2 hours. Taste and add salt and pepper if needed and more bourbon if “Doc’s” in the kitchen. Add carrots, celery potatoes and tomato sauce. Cook another hour. Add water as needed for desired consistency.
