Dan & Lois

KITV's Dan Meisenzahl interviews Ka Lei Eggs' Lois Shimabukuro-Miyake at the Ka Lei Marketplace store at 3585 Waialae Avenue in Kaimuki.  The store sells fresh from the farm eggs at great prices, locally grown vegetables and other food products made by local businesses.  If you would like to contact the Ka Lei Marketplace, call 737-7665.

The Ka Lei Marketplace in Kaimuki was all decked out for Easter!!  The Buy Fresh, Buy Local segments remind folks to support local farmers.  Ka Lei Eggs' Lois Shimabukuro-Miyake says that supporting locally grown eggs helps to maintain Hawaii's food security.  The more food we produce in the islands, the less reliant we will be on imported foods.  Plus, island-grown eggs are so much fresher than mainland eggs.

Kahala Kids
Getting ready for Easter, students from Kahala Elementary used nylon stockings to hold leaf patterns on the egg and dipped them in dyes.  The impressions of the leaves were delicate and beautiful.

Liliuokalani Kids
Dan is a graduate of Liliuokalani Elementary School and got to visit with current students as they decorated eggs by using stickers to create a negative image on the Easter eggs.

Tips from Ka Lei Eggs

Just how do you boil and egg?

Buy the freshest local eggs

Don't crowd the pot with eggs.

Add water until it is about 1 inch above the top of the eggs

Heat water on high until it begins to boil

When it begins to boil, remove from heat and cover.

Leave covered for 12 -15 minutes.

Why does my egg yolk look green around the outside?

The egg has been overcooked.

Why is my local boiled egg hard to peel?

The egg is very fresh, so the membrane on the side of the shell does not separate as easily as in an old egg.
