Ho Farms in Kahuku showcased its specialty tomatoes on the KITV Morning Show this month. The farm also grows long squash, long beans and Japanese cucumbers.

Wie Chong Ho moved his family from China to Hawaii in the late 1980s
and worked at various jobs, including a parking attendant and taxi
driver. In 1992, he established Ho Farms on 2 acres in Kahuku
growing Japanese cucumber. Today, Ho Farms is a highly successful
business enterprise that now covers 40 acres of land in Kahuku.
In addition to Japanese cucumber, the farm raises and markets a variety
of specialty vine-ripened tomatoes, long squash and long
beans.
The farm is one of the few in the state that is food safety certified, which is a national standard that ensures that the farm is following good agricultural practices. The farm also tries to minimize the use of pesticides on their plants by growing the produce in shade houses.
Ho Farms is also participate in the Hawaii Seals of Quality Program.
Ho Farm produce may be found at Costco, Foodland, Down to Earth, Kokua Market, Tamuras, Malama Market and the Farmers Markets at KCC, Mililani and Kailua. Coming soon to Whole Foods and Safeway.

Tomato, Mozzarella & Basil Salad
6 small tomatoes
1 lb. fresh mozarrella
10 - 15 basil leaves
3 Tbsp. olive oil
kosher salt and pepper
Slice tomatoes, mozzarella cheese. Add basil. Toss with olive oil and season with salt and pepper
