Po`amoho Farms Ambrosia Salad “Martini” with Ulu Chips

Recipe by Executive Sous Chef Andy Nelson, Pacific Beach Hotel

Yield:  2 servings

Ingredients (chopped):   
Apple Bananas  ¼ cup 
Lychee or Longan  ¼ cup 
Orange  ¼ cup 
Papaya  ¼ cup 
Pineapple  ¼ cup 
Rapoza Mango ¼ cup 
Blackberries  1/6 cup 
Blueberries  1/6 cup 
Raspberries  1/6 cup 
Strawberries  1/6 cup 
   
Ambrosia Whipped Cream  
Honey  *to taste 
Meyer lemon juice  *to taste 
Pure vanilla extract   ¼ teaspoon 
Heavy cream, whipped  ¾ cup 
Coconut flakes, toasted   1/3 cup 
Mint, chiffonade cut  2 teaspoons 
Caramalized macadamia nuts  garnish 


Ulu chips:

Ulu (breadfruit)
Canola oil

  • Preheat Canola oil to 350 degrees F

  • Peel and Thin slice breadfruit to form chips

  • Drop chips into clean oil and fry until lightly browned

  • Remove from oil and place onto a clean dry cloth to remove excess oil

  • Working quickly while still warm, sprinkle with Tahitian Vanilla sugar.


Tahitian Bean Vanilla Sugar

  • Slice down the middle of the vanilla bean

  • With back of knife, scrape seeds into an airtight container with the sugar.

  • Place the vanilla bean into the sugar as well.

  • Seal tight.

  • Allow sugar to sit for at least one week before using.


To Assemble:

  • In a martini glass, add a tablespoon of Ambrosia Whipped Cream.

  • Add spoonfuls of each fruit.

  • Top with more Ambrosia Whipped Cream.

  • Garnish with more toasted coconut flakes, caramelized macadamia nuts and mint.
