Cabbage Koko, Hot Hot Hot Dogs and Tofu Salad prepared by Derek Kurisu of KTA Superstores on the Big Island.
Derek Kurisu, executive vice president of KTA Superstores on the Big Island, starred in the November Buy Fresh - Buy Local segments on KITV Island Television News' Morning Show. Derek brought over the best in Big Island produce and value-added products, such as guava and papaya juice, tofu, cookies, grass-finished beef and sausage products.

Mahealani Richardson, Derek Kurisu, Ben Gutierrez and Dan Meisenzahl ham it up with the Big Island's Mountain Apple Brand Portuguese Sausage Hot, Hot, Hot Dogs with Kim Chee relish.
Derek demonstrated the following three recipes:
Cabbage Koko
½ large or 1 small cabbage – cut into strips
4 - 6 inch diakon sliced thin
Rinse and drain. (I use a vegetable spinner.) Mix daikon and cabbage together in large container.
Sauce:1 cup water
¾ cup sugar
1/3 cup vinegar
2 tsp salt
Warm sauce in microwave just enough to dissolve
sugar. (Do not heat sauce) It takes about 30 – 45
seconds. Be sure sauce is warm and not hot.
Pour sauce over cabbage and diakon. Stir and leave in
refrigerator overnight. Stir next day and product is ready!

Hot Hot Hot Dog
Place three Hot dogs in a rice cooker.
For regular hotdog: add water (cover about forth of hotdog)
Turn on rice cooker and watch it steam!
For Mountain Apple Brand Portuguese sausage Hotdog: brown outside in rice cooker when finished.
Place in hotdog buns and top it with chopped Kim chee.
Tofu Salad
1 bunch watercress (romaine lettuce with radish sprouts can be
substituted)
1 package Mountain Apple Brand bean sprouts
2 whole locally grown tomatoes diced
1 block firm tofu (sliced in chunks)
1 takuwan (sliced in matchstick size)
5 oz- 1 lb of Taegu (prepared Korean codfish)
Layer the above in pan starting with the watercress. Top with radish sprouts. Pour cooled sauce over before serving. Enjoy!
Sauce:½ cup shoyu
½ cup Wesson vegetable oil
2 cloves garlic (shredded)
2 tbsp sugar
Bring to boil and cook before pouring over salad.
Double the recipe for extra sauce
