Cabbage and Pineapple Salad (return to top) (printable version)

1 small head Island Fresh Head Cabbage, chopped fine
2 stalks Island Fresh Celery, sliced thin
1 Island Fresh Carrot, grated or sliced thin
¾ cup Island Fresh Pineapple, diced and drained
¾ cup Mayonnaise
1/8 teaspoon Ground Black Pepper

Toss cabbage, celery, carrots, pineapple in a large bowl.  Add remaining ingredients and toss until vegetables are evenly coated with dressing.  Chill until ready to serve.

Yield: 4-6 servings

 

Pineapple Cottage Cheese Lime Jello Mold (return to top) (printable version)

2 boxes Lime Jello or 1 large box
2 cups Hot Water
1/3 cup Mayonnaise
1 cup Island Fresh Milk
1 large tub Pineapple Cottage Cheese or 1 small tub of cottage and 1 small flat can crushed Pineapple 

Dissolve jello in hot water.  Let cool until firm then add mayonnaise and stir until mayonnaise dissolves.  Then add milk and mix.  Chill until slightly firm or for quick firming, put in freezer 15-20 minutes.  Then add cottage cheese and pineapple and cut into mold and chill.

 

Pineapple Mango Salsa (return to top) (printable version)

1 cup Island Fresh Pineapple, med. dice
1 cup Island Fresh Mango, med. dice
1 cup Island Fresh Tomatoes, med. dice
½ tablespoon Jalepeno Pepper, minced
1 tablespoon Island Fresh Chinese Parsley, minced
¼ cup Island Fresh Green Onions, chopped
1 tablespoon Shoyu
1 tablespoon Fish Sauce
½ tablespoon Rice Vinegar
1 tablespoon Garlic, minced
2 tablespoons Island Fresh Ginger, minced
1 oz. Peanut Oil
1 teaspoon Honey

Prepare all ingredients and mix well in a non-reactive stainless steel bowl.

This salsa goes well with grilled chicken or fish and even makes an interesting side dish to curries or Mexican food.

 

Pineapple Stir-Fried Rice (return to top) (printable version)

1.  2 tablespoons Asian Sesame Oil
2.  1 finely chopped Jalapeno
3.  2 tablespoons grated Island Fresh Ginger
4.  2 tablespoons finely chopped Lemon Grass
5.  1 tablespoon Minced Garlic
6.  1 ½ cups cooked and chilled Brown Rice
7.  1/3 cup Macadamia Nuts
8.  Nam pla to taste, about 3 tablespoons
9.  ¾ cup finely diced, Island Fresh Pineapple
10. ¼ cup chopped Mint
11. ½ cup coarsely chopped Cilantro

Heat wok or large pan and add #1,2,3 and 4.  Add #5, stir and cook for 30 seconds (do not burn).  Add #6 and cook until warm.  Add #7,8,9,10 and 11.  Note: Diced shrimp, scallops or other seafood may be added with garlic.

Yield: 4 servings
