Located on Oahu’s North Shore is The North Shore Cattle Company, a 1,100-acre ranch operation. Founded in November 1997 and family operated, it is the largest commercial grass-fed cattle operation on Oahu.
Grazing on natural grass pastures in the foothills of the Koolau mountains, the cattle are kept contented, calm and quiet. This, according to the company, makes the best beef. Local chef Alan Wong calls it “the best hamburger you will ever eat.”
“We produce beef for a niche market, and we measure our success by the quality of our beef rather than the quantity of beef produced,” says Doc Lum, co-founder of the company.
The result is 100 percent Hawaii grass-fed Angus beef — no antibiotics, no hormones. The beef is dry aged with all cuts of beef available, from lean ground beef to filet mignon to andouille beef sausages.
The North Shore Cattle Company also operates a burger stand at Dole Plantation in Helemano, Oahu, and a restaurant, the Paniolo Grill at Coral Creek, in Ewa Beach. Additionally, The North Shore Cattle Company’s beef is served at select restaurants throughout Oahu.
The grass-fed beef can be purchased at the farmers’ market at Kapiolani Community College on Saturday mornings and the Kailua farmers’ market on Thursday evenings.
